Banana quinoa bread

We love banana bread. How about you?

For those who aren’t familiar with banana bread – strictly speaking, it isn’t actually bread at all. Although the name seems that simple, it’s more of a mixture of bread and cake.

Any good banana bread should be nice and moist and, of course, taste like banana. There are all kinds of different options for livening up banana bread. For instance, we spice up our version with quinoa. Quinoa is a superfood that looks like a grain. Yet from a purely botanical point of view, it’s a plant in the amaranth family. It might not sound that appealing at first, but quinoa has a lot to offer. The seeds are packed full of mineral goodness and contain much more protein than everyday grains.

Our banana quinoa bread is a varied mix that’s wonderfully easy to bake in your oven at home. So you’ve got more time for the finer things in life!


What else you’ll need

For the dough:

  • 2 medium eggs
  • 75 g melted butter
  • 125 ml milk (1.5 % fat)
  • 2 ripe bananas (approx. 250 g)

For the glaze:

  • 30 ml (approx. 3 tbsp) lukewarm water

For the baking tray:

  • some grease


Make the dough

  1. Preheat a conventional oven to around 180°C (fan approx. 160°C).
  2. Melt the butter in a pot or the microwave and leave to cool for around 5 minutes.
  3. Then peel the bananas and mash them with a fork.
  4. Then put the baking mix, eggs, melted butter, milk and bananas in a bowl. Mix using the electric hand mixer (whisk) on the lowest setting for around 1 minute.


  1. Grease a loaf tin (approx. 25 cm). Place the dough in the tin and distribute evenly.
  2. Bake on the middle shelf of the preheated oven.
  3. Use a wooden skewer to check the cake is ready before taking it out of the oven.


  1. Once you have baked the cake, leave it in the tin for 10 minutes, then turn it out and leave to cool on a wire rack.
  2. Once the cake has cooled, the icing mix can be mixed with the lukewarm water to create the icing and spread evenly over the cake using a table knife.


Baking mixture: wheat flour, sugar, starch, red quinoa (2 %), baking powder (acid diphosphates, raising agent sodium carbonates), emulsifiers (polyglycerol esters of fatty acids, mono- and diglycerides of fatty acids), cinnamon, salt, natural flavouring.

Glaze mixture (19,6 %): sugar, fat reduced cocoa powder (15 %), starch.
