Funfetti Cake

Moist, quick to make, a wonderfully fluffy sponge cake and the best tray bake for a child’s birthday – we’re talking about our funfetti cake.

The light dough is topped off by silky smooth vanilla cream. Lots of colourful sprinkles on the cream and in the dough make this confetti cake a real highlight for every child. Our funfetti cake is also ideal for the next cake buffet at school, nursery or on special occasions.

What else you’ll need

For the dough:

  • 3 medium eggs
  • 170 ml oil
  • 150 ml water

For the cream:

  • 250 ml cold milk (1.5% fat)

Preparation

Make the dough

  1. Preheat a conventional oven to around 180°C (fan approx. 160 °C).
  2. Put the baking mix, eggs, cooking oil and water in a mixing bowl and mix with an electric hand mixer (whisk) briefly on the lowest setting at first, then on the highest setting for around 3 minutes, until creamy.
  3. Set aside 2 tbsp of sugar confetti. Mix the rest of the confetti into the dough before spreading the mixture onto a baking tray (30 x 40 cm) lined with baking paper.

Bake

  1. Now bake the cake on the middle shelf of the preheated oven for around 25-30 minutes, then leave to cool. We recommend baking the cake in a conventional oven. The baking time is 5 minutes longer for fan ovens.

Decoration

  1. Once the cake has cooled, the sachet of glaze can be placed in hot water for 10 minutes.
  2. At the same time, put the cream powder into a bowl and beat with the milk. Then spread the cream over the cake with a knife or teaspoon.
  3. Remove the sachet of glaze from the water, dry and cut out a little corner. Spread the glaze on the cream in stripes and decorate with the rest of the colourful sugar confetti as desired.
