Gluten-free Rainbow Party Cake

Your little one’s birthday party is coming up but you have no idea
what to bake. Some of the kids who are invited even suffer from gluten

If gluten-free baking is a challenge for you, we’ve got the perfect solution!

rainbow party cake is a light, fluffy, moist tray bake made using rice
flour. It takes just a few steps to make, making it ideal for novice
bakers. With its light green glaze and colourful flower sprinkles, the
cake is a highlight of any birthday spread.


What else you’ll need

For the dough:

  • 5 medium eggs
  • 250 ml cooking oil
  • 250 ml water

For the glaze:

  • 35 ml (approx. 3-4 tbsp) water


Make the dough

  1. Preheat a conventional oven to around 180 °C (fan approx. 160 °C) and line a baking tray with baking paper.
  2. Put
    the baking mix, eggs, cooking oil and water into a mixing bowl and mix
    with an electric hand mixer (whisk) briefly on the lowest setting first
    of all, then on the highest setting for around 1 minute, until creamy.
    Then spread the dough on the baking tray and smooth out.


  1. Bake the cake at medium heat in the preheated oven for 30-35 minutes before leaving to cool.


  1. Mix
    the glaze mixture with water until smooth and spread on the cake.
    Sprinkle the glaze with decorative flowers while still moist.
