Organic Lemon Cake

It doesn’t always have to be extravagant – a simple lemon cake is often the highlight of any spread. Whether as a tray bake, a loaf cake, a mini ring cake or in a springform pan, the lemon cake tastes great in all shapes and sizes.

If you’re looking for a moist, simple lemon cake, our organic lemon cake is perfect for you. The fruity glaze gives the cake a special fresh flavour. We only high-quality controlled organic ingredients for this cake.


You’ll need to add

For the dough:

  • 3 medium eggs
  • 150 g soft butter or margarine
  • 50 ml milk (1.5% fat)

For the glaze:

  • 20 ml (2 tbsp) lukewarm water


Make the dough

  1. Preheat a conventional oven to 180 °C (fan approx. 160 °C).
  2. Put the baking mix, soft margarine or butter, eggs and milk in a mixing bowl and mix with an electric hand mixer (whisk) briefly on the lowest setting at first, then on the highest setting for around 3 minutes, until creamy.


  1. Now grease a loaf tin (25 cm) and dust it with flour. Add the dough and smooth out.
  2. Bake the cake on the middle shelf of the preheated oven for 50-60 minutes. After around 15 minutes’ baking time, make a cut 1 cm deep lengthwise in the middle of the cake. Use a wooden skewer to check the cake is ready before taking it out of the oven.

Cool and glaze

  1. After baking, remove the cake from the tray and place on a wire rack to cool.
  2. When the cake is cooled, you can mix the glaze mixture with lukewarm water until smooth and spread on the cake with a knife.


Baking mixture: wheat flour*, cane sugar*, maize starch* , baking powder (acid potassium tartrates, raising agent sodium carbonates), natural flavouring.

Icing mixture (21 %): sugar*, potato starch*, acid citric acid, natural lemon flavouring with other natural flavourings.

*These ingredients orginate from controlled organic agriculture.
