A slice of raspberry cake is a welcome sight on the coffee table. At family parties, coffee with friends or on the cake buffet at a school festival, raspberry cake proves almost impossible to resist. Usually, there’s just a few crumbs left.

Less-sweet raspberry cake – vegan recipe

If you watch what you eat but don’t want to miss having a delicious slice of cake, we recommend you try this delicious raspberry cake with marble effect. We only use raw materials from controlled organic farming and use raw cane sugar instead of classic white sugar. As our recipe components are vegan, the cake can easily be made into a vegan raspberry cake. Just use margarine instead of butter, apple puree instead of eggs and a plant-based drink for the cream.

You’ll also need:

  • 300 g frozen raspberries (alternatively fruits of the forest or similar)
  • 200 g butter
  • 3 eggs (medium)
  • 150 ml milk (1.5% fat)

To make a vegan version you’ll need:

  • 200 g plant-based margarine
  • 120 g apple puree
  • 150 ml plant-based drink

Preparation

  1. First defrost the frozen fruit in a sieve.8. Preheat a conventional oven (top and bottom heat) to 180°C (fan oven 160°C) and line a springform tin (26 cm in diameter) with baking paper and grease the sides.
  2. Put the baking mix, soft butter and the eggs into a mixing bowl and mix using an electric hand mixer (whisk) on the highest setting for 3 minutes until creamy.
  3. Now put the milk into a mixing container, add the cream powder and whisk into a smooth mixture.
  4. Put part of the dough into the springform so that the base is covered. Now add a blob of the cocoa cream with some of the fruit on top to create a marble pattern. Repeat the process until all of the components have been used up. The last layer should just be dough and cocoa cream.
  5. Bake the cake in the bottom third of the preheated oven for around 60 minutes. Check that the cake is fully baked in a light-coloured area of the dough before taking it out of the oven.
  6. After baking, leave the cake to cool on a wire rack. Loosen the edges of the springform tin after 10 minutes.

Vegan method:

Creme powder: raw cane sugar*, fat reduced cocoa powder* (4 %), maize starch*, potato starch*.
