Raspberry Cupcakes

Cute little cakes with a delicious cream topping – it has to be cupcakes! Whenever we see cupcakes, we’re delighted, and they make us melt. Do you feel the same?

You’re sure to melt when you set eyes on our wonderful raspberry cupcakes – they’re so sweet you’ll fall in love! The little cakes with the pink cream topping are made with cream cheese and butter. The frosting is topped off with white chocolate shavings. These little bites are a feast for the eyes as well as the palate and are sure to enchant your guests. The little pink cases are already included – so you can get baking right away!

What else you’ll need

For the dough:

  • 1 medium egg
  • 100 ml cooking oil
  • 100 ml milk (1.5 % fat)

For the cream:

  • 50 g soft butter
  • 200 g cream cheese

Preparation

Make the dough

  1. Preheat a conventional oven to around 160 °C (fan approx. 150 °C).
  2. Put the baking mix, egg, cooking oil and milk in a mixing bowl and mix with an electric hand mixer (whisk) briefly on the lowest setting first of all, then on the highest setting for around 2 minutes, until creamy.

Bake

  1. Now place the 12 cases on a baking tray and distribute the dough evenly between the cases using two tablespoons. Bake the cakes on the middle shelf of the preheated oven for around 25 minutes. Use a wooden skewer to check whether the cakes are baked properly before removing them from the oven.
  2. After baking, place the cakes on a wire rack to cool.

Make the cream

  1. Now put the cream cheese, soft butter and cream powder in a mixing bowl and mix with an electric hand mixer (whisk) briefly on the lowest setting first of all, then on the highest setting for around 1 minute, until creamy.
  2. Once the cakes have cooled, the cream can be distributed between them equally using two teaspoons and smoothed out using a table knife.
  3. A piping bag can also be used as an alternative. Decorate the cupcakes with chocolate shavings. Keep in the fridge until it’s time to eat.
