Tarte Flambée

This sophisticated speciality from the Alsace region of France is a wonderful treat as the days get shorter and winter approaches. The light and crispy dough with the delicious savoury topping takes just a few simple steps to prepare.

Our tarte flambées create a unique atmosphere over dinner with friends and family and a bottle of good wine.

What else you’ll need

For the dough:

  • 150 ml water

For the topping:

  • 300 ml water
  • 75 g smoked diced ham
  • 250 g crème fraîche
  • a little wheat flour for the worktop

Preparation

Prepare the topping

  1. Preheat a conventional oven to 220 °C (fan approx. 200 °C).
  2. Then place the flavouring mix in a bowl. Add water and ham and mix evenly.

Make the dough

  1. For the dough, put the baking mix and water in a mixing bowl.
  2. Mix briefly with an electric hand mixer (dough hook) on the lowest setting and then knead for around 3 minutes on the highest setting. Shape the dough into a ball on a worktop lightly dusted with flour and leave to rest for around 5 minutes.

Bake

  1. Line a baking tray (approx. 40 x 30 cm) with baking paper and roll out the dough on the baking tray.
  2. Now spread the crème fraîche evenly over the dough and add the topping.
  3. Bake the tarte flambée on the middle shelf of the preheated oven for around 30 minutes.

Ingredients

baking mix:
wheat flour, palm oil, glucose sirup, baking powder [acids (glucono-delta-lactone, potassium tartrates); raising agents sodium carbonates], milk protein.

seasoning mix:
onions, modified starch, palm oil, sour cream powder, cheese powder, yoghurt powder, cream powder, salt, granular broth (hydrolyzed vegetable protein, salt, sunflower oil), spices, lactose, yeast extract, thickener guar gum, milk protein, sugar, flavouring.
