Apple and Oat Cake

Oats have once again become a culinary trend, whether as overnight oats, warm porridge, or an ingredient in healthy cakes. Oats are indisputably one of the healthiest foods. They contain important minerals, fibre, antioxidants and lots of key vitamins.

Oats can also be combined with a wide variety of flavours, such as the trendy ingredient of recent years: the tonka bean. It’s the latest flavour beloved by gourmet chefs, adding a special touch to all kinds of dishes, particularly desserts, with its incomparable flavour.

Both ingredients combine with apples to create a delicious balance of flavours, which we’ve brought together for you in a simple loaf cake – it might not look dramatic, but the flavour will knock your socks off!

What else you’ll need

For the dough:

  • 3 medium eggs
  • 100 g soft butter or margarine
  • 75 ml milk (1.5 % fat)
  • 1 large apple (approx. 200 g)

For the glaze:

  • 20 ml (approx. 2 tbsp) lukewarm water
  • a little grease and flour for the baking tin

Preparation

Make the dough:

  1. first of all, preheat a conventional oven to around 180°C (fan approx. 160°C) and grease a loaf tin (approx. 25 cm) and dust it with flour so that the dough does not stay stuck in the tin after baking.
  2. Then peel the apples and chop into small pieces or grate roughly.
  3. Put the baking mix, eggs, milk and butter or margarine in a mixing bowl and mix with the electric hand mixer (whisk) on a low setting first of all, then on the highest setting for around 3 minutes, until creamy.
  4. Then fold the apple pieces into the dough.

To bake:

  1. put the dough in the loaf tin and spread.
  2. Bake the cake on the middle shelf of the preheated oven. After around 10 minutes’ baking time, an incision around 1 cm deep lengthwise should be made in the cake with a knife.
  3. After the stated baking time, use a wooden skewer to check the cake is ready.

To cool:

  1. Leave the cake to cool in the tray for around 5 minutes, then turn out of the tray and leave to cool completely on a wire rack.
  2. Once the cake has cooled completely, the glaze can be mixed with lukewarm water and applied evenly to the cake using a table knife.

Baking mixture: wheat flour, sugar, rolled oats (15 %), starch (contains wheat), baking powder (acid diphosphates, raising agent sodium carbonates), emulsifiers (E 475, E 471), salt, ground tonka beans.

Glaze mixture (21,5 %): sugar, lactose, starch, ground tonka beans.
