Ruby chocolate is the new kid on the block when it comes to chocolate – a brand new flavour taking its place alongside dark, milk and white chocolate varieties. This pink chocolate hasn’t been coloured or flavoured with additives.

Ruby chocolate is the result of a top-secret recipe from chocolatier Barry Callebaut. As well as its unique colour, this chocolate stands out thanks to its intensely fruity, slightly tart flavour.

Preparation

  1. Put the desired amount of couverture chocolate chips into a heat-resistant container.
  2. Melt the couverture over a water bath on a low heat and coat cakes, pastries or chocolates any way you like.

Note: Make sure not to get water into the couverture when heating it in the water bath.
