Our cherry cake with chocolate chips is the perfect accompaniment to a casual coffee. A fine sponge mixture, lots of tasty chocolate chips and juicy cherries are what make this cake so special. Our cherry cake is really quick and easy to make and a tasty treat on every occasion.
What else you’ll need
150 g soft margarine or butter
3 medium eggs
25 ml (approx. 2 tbsp) milk (1.5 % fat)
1 glass sour cherries (net drained weight 350 g)
Make the dough
Preheat a conventional oven to around 175 °C (fan approx. 150 °C) and line a springform tin (26 cm with diameter) with baking paper.
The cherries should now be drained thoroughly in a sieve. Put the baking mix, soft margarine or butter, eggs and milk in a mixing bowl and mix with the electric hand mixer (whisk) briefly on the lowest setting first of all, then on the highest setting for around 3 minutes, until creamy. Add the chocolate chips and stir in quickly.
Then put the mixed dough into the springform tin and smooth out. Evenly spread the cherries over the dough, leaving an edge around 1 cm wind. Bake the cake on the middle shelf of the preheated oven.
Once baked, remove the cake and place on a wire rack to cool. Dust with powdered sugar as desired.
