Organic Agar

You need a gelling agent to make some dishes, cakes and desserts. But sometimes you’d rather avoid animal-based gelatine as it doesn’t suit your diet or for health-related or ethical reasons. Our agar is the perfect alternative!

This gelling agent is purely plant-based. It helps you give your sweet dishes or savoury jellies – including vegetarian or vegan ones – the desired set naturally without animal-based products. Agar is obtained from blue or red algae. The ingredients of our organic agar come from certified controlled organic farming. One sachet is enough for 500 ml fluid and is the equivalent of around 6 leaves of gelatine.

Note: When using agar, you may need to adjust your recipe slightly. If you are working with acidic fluids or vinegar, you should use double the amount of agar to achieve the right set. It also gives off a particular smell during cooking – which can only be smelled when it boils. The agar has a completely neutral odour and taste in the cooled dish. Please also note that this plant-based gelling agent sets at 35 °C after cooking.

Preparation

For cold mixtures:

  1. Boil the contents of a sachet of agartine with 50-100 ml fluid (e.g. water, milk or cream) in a cooking pot for 2 minutes.
  2. Then stir in the cold ingredients and quickly pour into the appropriate tray.
  3. When adding whipped cream (e.g. for pie fillings), leave the hot mixture to cool slightly, otherwise the cream will melt.

For hot mixtures:

  1. before boiling, add agartine to the fluid and boil for at least 2 minutes.
  2. Leave to cool for 1-3 hours, according to the recipe.
