Simple sponge cake: a basic recipe for tasty cakes

Sponge cake is our classic basic dough. With our basic sponge cake recipe, you can whip up a light and airy sponge cake – the base for many tasty cakes – in an instant. Whether you’re planning a classic strawberry tart or an elaborate multi-layered wedding cake, our sponge cake dough is the perfect choice.

Versatile basic doughs for all kinds of cakes

Our sponge cake recipe is very easy to make. With just a few ingredients and in a few easy steps, you can whip up a wonderfully light sponge cake in an instant. And if you fancy a little variety, you can try our other basic doughs. Our basic doughs are so versatile you can use them for all kinds of different cakes and bakes.

For the dough:

  • 4 eggs (medium)
  • 30 ml water


Basic method:

  1. Put the basic mix, egg and water in a mixing bowl and mix it using the electric hand mixer (whisk) briefly on the lowest setting first of all, then on the highest setting for at least 3 minutes, until creamy.
  2. Line a springform tin (26 cm) with baking paper, add the mix and smooth it out. Bake the base in the preheated oven at 180 °C top/bottom heat (160 °C fan) on the middle shelf for around 15 to 20 minutes.
  3. Use a wooden skewer to check the sponge is baked through before taking it out of the oven.
  4. Cool and decorate: after baking, leave the cake to cool in the tin and continue decorating as desired.


Sugar, wheat flour, wheat starch, emulsifiers (polyglycerol esters of fatty acids, acetic acid esters of mono- and diglycerides of fatty acids, lactic acid esters of mono- and diglycerides of fatty acids, mono- and diglycerides of fatty acids), starch, baking powder (acidifier diphosphates, raising agent sodium carbonates), glucose syrup, skim milk powder, table salt.
