For the dough:

    230 ml lukewarm water

Preparation

Make the dough

  1. Add the baking mix, yeast and half the
    sunflower seeds to a mixing bowl and combine them together. Add the lukewarm
    water. Mix with an electric hand mixer (dough hook) briefly on the lowest
    setting at first, then mix into a smooth dough on the highest setting in around
    4 minutes.
  2. The dough should come away from the edge of the bowl. Cover the
    dough and leave to rise in a warm place for around 30 minutes.

Bake

To
make one loaf:

Grease a loaf tin (26 cm) and sprinkle
with some of the leftover sunflower seeds. Briefly knead through the dough
again and shape it into a long loaf. Then place this in the loaf tin, brush it
with water and sprinkle it with the remaining sunflower seeds. Cover the dough
and leave it to rise for an additional 30 minutes in a warm place. Then bake
the dough for around 40 minutes in a preheated oven at 200 °C top/bottom heat
(180 °C fan).

To
make 9 rolls:

Briefly knead through the dough
again, split it into 9 pieces and shape them into round rolls. Brush the rolls
with a little water and roll the undersides in the leftover sunflower seeds.
Sprinkle the top with the remaining seeds. Place the rolls on a baking sheet
lined with baking paper. Cover the dough and leave it to rise again for around 30
minutes in a warm place. Then bake the dough for around 20 minutes in a
preheated oven at 200 °C top/bottom heat (180 °C fan).

Ingredients

Baking mix: wheat flour, rye flour, table salt, 1.2% dried rye sourdough (wholemeal rye flour), sugar, grape seed flour.
Sunflower seeds (12%): hulled sunflower seeds.
Dry baker’s yeast (1.7%): Yeast, emulsifier sorbitan monostearate.
