RUF Buttercream is ready in just five minutes. Simply mix milk with the cream powder to make a pudding cream, then add soft butter and stir – and you’ve got some truly tasty buttercream.

• 250 g soft butter
• 350 ml milk (1.5% fat)
• The milk and butter should be at the same temperature (room temperature).

Preparation

1. Pour the milk into a mixing bowl and add the cream powder. Using a handheld electric mixer (whisk), mix first on low speed, then on high speed for 1 minute until a custard is formed.
2. Add the softened butter to the custard and mix with the electric hand mixer (whisk) for 3 minutes on high speed.
3. If the butter cream is still too firm, put it in the microwave for 30 seconds at 300 watts and then whisk for another 1 minute.
