How do you make a fruit cake nice and moist?

For the dough:

  • 2 eggs (medium)
  • 100 g butter or margarine

For the baking tin:

  • A little grease and wheat flour


Prepare the dough:
  1. Place the gund mixture, eggs, and butter or margarine in a mixing bowl and mix with an electric hand mixer (whisk attachment), first briefly on low speed, then on high speed for about 1 minute until creamy.
  1. Grease and flour a fruit cake pan (Ø 28 cm) or springform pan (Ø 26 cm), pour in the batter and smooth it down. Bake the cake in the preheated oven in the lower third.
  2. Before taking out, check with a wooden stick if the bottom is baked through.
Cool and cover:
  1. After baking, immediately turn the base out onto a cake rack lined with baking paper and let cool.
  2. Top the base with fruit as desired and pour cake glaze over it.
Tip: We recommend baking the fruit base at top/bottom heat.
