Lemon Cake

It’s Sunday, and the telephone is ringing. Someone’s coming round for coffee at short notice. But where are you going to get a cake from?

With our cakes in your cupboards, it’s easy to bake a cake at the drop of a hat! What about a lemon cake? This sponge cake is rightfully a popular classic. Whether you’re having coffee with small group or a wider circle, lemon cake always goes down well. This wonderfully light and moist classic has a remarkable fine lemon flavour and a fresh and fruity lemon glaze. Easy to make, this classic can be prepared in just a few minutes.


What else you’ll need

For the dough:

  • 150 g soft margarine or butter
  • 3 medium eggs
  • 100 ml milk (1.5 % fat)
  • a little wheat flour for the baking tin

For the glaze:

  • 20 ml (approx. 2 tbsp) lukewarm water


Make the dough

  1. Preheat a conventional oven to 180 °C (fan approx. 160 °C).
  2. Put the baking mix, soft margarine or butter, eggs and milk in a mixing bowl and mix with an electric hand mixer (whisk) briefly on the lowest setting at first, then on the highest setting for around 3 minutes, until creamy.


  1. Grease a loaf tin (25 cm) and dust with flour.
  2. Now you can add the dough to the tray and smooth it out.
  3. Bake the cake on the middle shelf of the preheated oven.
  4. After around 15 minutes’ baking time, make a cut lengthwise in the middle of the cake around 1 cm deep. Use a wooden skewer to check the cake is ready before taking it out of the oven.

Cool and glaze

  1. After baking, remove the cake from the tray and place on a wire rack to cool.
  2. When the cake is cooled, the glaze mixture can be mixed with lukewarm water until smooth and spread on the cooled cake with a knife.
