Lemon Tart

Do you like a little sweet and sour? Then our lemon tart is an absolute must. This refined French classic is a refreshing and light tart which is ideal for any summer party, afternoon coffee or at the end of a magnificent meal. Our lemon tart is unbelievably moist and is very quick to make!


What else you’ll need

For the dough:

  • 125 g butter
  • 3 medium eggs

For the glaze:

  • 20 ml (approx. 2 tbsp) lukewarm water


Make the dough

  1. Preheat a conventional oven to around 175 °C (fan approx. 150 °C) and line a springform tin (26 cm in diameter) with baking paper.
  2. Put the butter in a pot, melt and leave to cool slightly. Put the baking mix, eggs and melted butter in a mixing bowl and whisk into a smooth mixture


  1. Now put the dough into the springform tin and smooth out. Bake the cake on the middle shelf of the preheated oven for around 25 minutes.
  2. Use a wooden skewer to check the cake is ready before taking it out of the oven.

Cool and glaze

  1. After baking, remove the cake from the tray and place on a wire rack to cool.
  2. Then mix the glaze mixture with lukewarm water until smooth and spread on the cooled cake with a knife.


Baking mixture: sugar, wheat flour, humectant sorbitol, starch, emulsifiers (E 471, E 475), baking powder (acid diphosphates, raising agents sodium hydrogen carbonate), natural flavouring, salt.

Glazing mixture: sugar, lactose, modified starch, acid citric acid, natural flavouring.
