A cheesecake for kids’ birthdays

Our RUF Fairy-Tale Cheesecake is full of fantastic flavour. Taking pride of place at any kids’ birthday party, its pastel colour design is sure to take the whole family and their guests on an enchanting journey through the world of imagination.

The fairy-tale cake consists of a delicious shortcrust base with a light and fluffy vanilla-flavoured cheesecake topping. The quark cake is dyed with two different colour mixes, making the cake an eye-catching work of art for any birthday spread.

For the dough:

  • 1 egg (medium)
  • 100 g soft butter or margarine

For the cream:

  • 250 g butter
  • 1.5 kg low-fat quark
  • 7 eggs

Preparation

  1. Preheat a conventional oven (top and bottom heat) to 180°C, grease a baking tray and dust it with flour (or line it with baking paper).
  2. Put the cake mix, egg and soft butter/margarine in a mixing bowl and make into coarse crumbs using an electric hand mixer (dough hook). Put the crumbs on the baking tray and press down to create an even base.
  3. For the cream topping, melt the butter in the microwave or a saucepan and leave to cool a little.
  4. Add the cream powder, quark, eggs and melted butter to a mixing bowl and mix with an electric hand mixer (whisk) for around one minute to make a creamy mixture.
  5. Split the cheesecake cream into three portions. Take two of the portions and add a different colour mix to each one. The third portion will not be dyed.
  6. Then put the cream onto the base in dollops and create a gentle marbled effect using a fork. (The colour of the cream will only fully develop when baked.)
  7. Bake the cake on the bottom shelf of the preheated oven and then leave to cool on the baking tray.
