Rainbow Cake

Here’s a bake that’s guaranteed to brighten your mood – the colourful sponge mix will bring a little magic to your day! Although it looks impressive, our rainbow cake is a tray bake that’s quick and easy to make. This colourful cake creation will delight those with a sweet tooth. It isn’t just for the kids – it’s for the whole family. Kids love the bright colours and adults appreciate the delicious flavour and light consistency of the sponge cake.

What else you’ll need

For the dough:

  • 3 medium eggs
  • 170 ml cooking oil
  • 150 ml water

For the glaze:

  • 30 ml warm water (approx. 2 tbsp)

Preparation

Make the dough

  1. Preheat a conventional oven to 180 °C (fan approx. 160 °C).
  2. Put the baking mix, 3 eggs, 170 ml cooking oil and 150 ml water in a mixing bowl and mix it using the electric hand mixer (whisk) briefly on the lowest setting at first, then on the highest setting for around 3 minutes, until creamy.

Colour and bake the dough

  1. Now split the dough into three equal-sized portions and put in different bowls. Mix the pink colour mix into one part of the dough, and the green colour mix into a second part of the dough. The three doughs can then be alternated on a greased baking tray dusted with flour (30 x 40 cm) using tablespoons.
  2. Bake the cake on the middle shelf of the preheated oven for 25-30 minutes and then leave to cool on the baking tray.

Decoration

  1. Once the cake has cooled, the glaze mixture can be put in a bowl and mixed with lukewarm water until smooth. If the glaze mixture is too firm, simply add a few more drops of water.
  2. Then spread the glaze on the cake with a table knife or teaspoon. Scatter the sugar sprinkles on the glaze while still moist.
